Greek Lemon Chicken Skewers

Sean told me about 10 times that this was one of the best recipes I have ever made. He gushed about the flavor of the chicken and how well it went with my Stupid Easy Clean Tzatziki Sauce (No Cucumber) !

This recipe took 15 minutes start to finish , including cooking time. So easy, so delicious. Keep in mind it will take a bit longer if you are using raw chicken. We used some pre-cooked plain chicken skewers that Sean had picked up for quick lunches but never used. I believe he found them at Target. Just make sure to read your ingredients, most pre-packaged cooked meats have tons of additives.

Greek Lemon Chicken Skewers

  • 4-6
Chicken Breasts cut in to 1 – 1/2 inch pieces
  • Skewers
(If you use wood, remember to soak them)
  • 2 Teaspoons
  • 2 Tablespoons
    Olive Oil
  • 1 Teaspoon
    Red Wine Vinegar
  • 1-2 Teaspoon(s)
    Salt + Pepper
  • 1/2
    Juiced Lemon
  • 1 Tablespoon
    Minced Garlic

Cooking Directions

  1. Preheat oven to 400 degrees
  2. Using a large Ziploc bag combine all ingredients. I like to let sit in the marinade for about an hour but if you are short on time, you can let it sit while you preheat the oven and do whatever else you need to do (like those dishes sitting in the sink!)
  3. Once marinaded put chicken on your skewers
  4. Place on pan (I used wire rack on top of a pan so the chicken cooked evenly and the drippings went on to the pan instead of the bottom of my oven)
  5. Cook in oven for 12 minutes if chicken is pre-cooked and 25 minutes if you are using raw chicken (you can also grill the chicken for 3 or 4 minutes on each side)
  6. Enjoy!
