Paleo / Whole30 Italian Balsamic Pork Chops

I had pork chops thawed and had no idea what to do with them (story of my life). I was originally craving Chicken Parmesan so I decided to adapt my craving into an Italian Balsamic recipe and put it on top of my 10 Minute Garlic Cauliflower Mash . It was so good that it almost felt like I was having something I shouldn’t!

Italian Balsamic Pork Chops


  • 6
    Boneless Pork Chops
  • 1 Pint
    Cherry or Grape Tomatoes
  • 2 Tablespoons
    Olive Oil
  • 1/2
    Onion (color of your choice)
  • 1-2 Tablespoon
    Balsamic Vinegar
  • 1-2 Cloves

Cooking Directions

  1. Heat olive oil in pan for 1 minute on high
  2. Cook pork chops in oil for 2-3 minutes each side
  3. Set pork chops aside
  4. Add chopped onion to oil and cook until almost carmalized
  5. Add in garlic and quartered cherry tomatoes , combine mixture and cook for additional 3-4 minutes or until tomatoes and garlic becomes soft and fragrant
  6. Add back the pork chops and spoon tomato mixture on top of each chop
  7. Drizzle desired amount of balsamic vinegar on top
  8. cover and let simmer for 1-3 minutes
  9. Serve with cauliflower mash, potatoes or veggies
